      • The famous ancient city of Antigua contains over 43 churches, so it is no surprise that this special coffee gets the brand “Iglesias.” Antigua Iglesias comes from the Plantation Santo Tomas and El Vallecito. Both are located in Ciudad Vieja in the state of Sacatepéquez at the slopes of the Volcano Agua. The coffee grows under Grevillea trees in rich volcanic soil, then harvested and brought to the famous mill, Concepcion Escuintla, where it is sundried on patios and separated by size, density, and color. The result is a superior coffee with extreme complexities.

      • We're so excited to share these super special coffees with you and collaborate with incredible local artist Cubs the Poet.

This set contains two coffees from the same farm, processed two different ways. That means that the difference in taste comes from the processing only, and these coffees are very distinct!

        • Flavor profile for honey process: Pineapple, Brown Sugar, White Peach
        • Flavor profile for natural process: Vanilla, Grape Skittle, Dried Mango

We partnered with our neighbor Cubs, who designed a collage after learning about coffee processing and tasting the coffees with us. The art was Riso printed locally by Constance into a poster, included in the set, and incorporated into the box design.

        This set contains:

        • One 8oz bag of Tirra Honey
        • One 8oz bag of Tirra Natural
        • Cubs the Poet Poster

Complete the set by learning about coffee processing at one of our classes dedicated to this Process Set!

    • Gallop
      Great as Espresso

      Gallop

      tasting notes

      • Red Apple
      • S'mores
      • Black Cherry

      • When the day calls for a faster pace, we opt for Gallop. While the blend changes with each harvest, the Gallop profile is a staple in our offerings. The nutty flavor up front slowly turns to  a cool milky chocolatey sweetness with a note of caramelized white sugar. Gallop plays nice with milk and sits equally confident by itself in a demitasse. We recommend for those days when you need to lift both feet off the ground in stride.
