      • From the Rutas del Inca coop in Northern Peru, we're excited to bring y'all this delicious coffee. It boasts both Gesha and Caturra varietals and offers a very clean cup. We think it tastes like a well balanced dessert that is creamy and tart with an almost effervescent mouthfeel.

      • We have a weird one for y'all!  After the Red and Yellow Caturra cherries are picked at peak ripeness, they undergo a 4 hour pre-fermentation on tarps. They are then transferred to airtight tanks where they undergo 7 hours of anaerobic fermentation with the addition of the bacteria Lactobacillus Plantarum. This process gives the coffee a beautiful balance of fruitiness, creaminess, and lactic acidity.

      • This coffee's journey begins with 60 hours of anaerobic fermentation, is then depulped and transferred to anaerobic steel tanks where the pH is monitored until optimal fermentation conditions are reached. Once reached, a lactic acid bacteria mix made from cooked sugarcane and passionfruit is added. This semi-washed (as known as honey) process results in the perfect balance of weird and familiar that any coffee drinker can get behind!

      • When the day calls for a faster pace, we opt for Gallop. While the blend changes with each harvest, the Gallop profile is a staple in our offerings. The nutty flavor up front slowly turns to  a cool milky chocolatey sweetness with a note of caramelized white sugar. Gallop plays nice with milk and sits equally confident by itself in a demitasse. We recommend for those days when you need to lift both feet off the ground in stride.

      • Our High Walk gets us going in the morning. It helps us push our shoulders back, open our eyes, stand a bit taller. High Walk honors the classic morning cup of coffee– round and sweet on the palate with a hint of nutty chocolate on the nose and a medium-body.
